Since moving in with my boyfriend, I’ve discovered how much I love to cook. There’s nothing I enjoy more than finding yummy, nutritious meals and trying them out myself. In this series on my blog I am going to share a recipe I’ve found either online, in store or in a recipe book or magazine and take you through the steps to make it. I love an easy, time saving recipe – although I like to cook things that take a little longer to make on a weekend when I have more time.
I found this Spicy Wholegrain Bowl recipe in my local Waitrose, I always like to look at their monthly recipe cards and this one caught my eye as I love anything with avocado in it and it contains 2 of the recommended 5 a day of fruits and veggies. I’m trying to have at least one meat-free meal a week and this fitted the bill perfectly. This recipe can be found online here if you’d like to try it yourself.
You will need (Serves 2):
- 1/2 tbsp Olive Oil
- 1 Medium Egg (Beaten)
- 1 Pouch of Quinoa & Wholegrain Rice mix
- 400g Chickpeas
- 2 Tomatoes (chopped)
- 1-2 tsp Harissa Paste
- 1 Ripe Avocado
- 2 Salad Onions
- Juice of 1/2 lime
- Coriander Leaves
The First thing I did was drain the chickpeas, chop the tomatoes and slice the avocado:
I then heated a tiny bit of oil and scrambled the egg in pan. Once this was cooked I set aside on a plate and left to cool.
I then added the rice & quinoa, chickpeas, tomatoes and Harissa paste into the pan, giving it a good stir and cooked it for about 5 minutes until it was all cooked through and the tomatoes had softened.
Whilst this was heating through I mashed up the avocado with a fork and mixed in the lime juice in a separate bowl
Once the rice mix was heated through I stirred the pre-cooked egg back into the mix and turned the heat off. I divided the mix between two bowls and topped with the avocado mixture.

I had no onions or coriander so didn’t add these. It tasted so delicious, the avocado really helped cool down the spiciness of the Harissa paste. it was surprisingly filling too! A great meat-free meal that I’m definitely going to make again!
